Mom used to make this on special occasions. It remains one of my dad's favorites!

Yields1 Serving
 1 lb shrimp, peeled and deveined
 2 tbsp oil
 2 medium onions, chopped
 1 tsp ginger paste
 1 tsp garlic paste
 ½ tsp tumeric powder
 ½ tsp cumin powder
 ½ tsp coriander powder
 1 tsp garam masala
 1 small can crushed tomatoes
 1 can coconut milk
 1 green chili, slit
 salt to taste

Heat oil and fry onions till lightly golden.

Add ginger, garlic pastes and all the dry spices. Fry for a few seconds.

Add tomatoes and fry gently till done.

Add the coconut milk, green chili and salt. Bring to a boil.

Add shrimp. Lower heat and simmer a few minutes until shrimp is done, being careful not to overcook.

Coconut Shrimp Curry
